have you looked at chocolatecoveredkate.com? i'm not sure if she has cake recipes, but there are a lot of great dessert recipes on there that are healthier alternatives.

also, allrecipes.com is my go-to site for a recipe. you can just type in 'low-fat cake', and you'll get a lot of hits. i usually sort the results by rating.

    good luck!

I don't know how long you have until your birthday, but I recently bought this book from Amazon: http://www.amazon.com/gp/product/0761130357 It's called "Small Batch Baking." The treats aren't necessarily lower-fat/healthier, but each recipe serves 2 to 4 people, so you don't have leftovers! It's great.

On my birthday I skipped the cake and went right for the good stuff, a salon :flowerforyou: pedicure. I can tell you that the hour of pampering was much better than any sweets could be. Wow, I never ever thought I would say that. Happy Birthday!

Cupcakes! And use applesauce instead of oil as well as egg whites instead of eggs! Also, nix the frosting for some low-fat whipped cream from the can.. totally spray your own frosting, it would be fun!

OR make rice krispie treats and shuffle in some colored sprinkles to make it look like funfetti cake!
  • You could try a pavlova and instead of using whipped cream you could use dairy whip (New Zealand) or Cool Whip (US) and top it with fresh berries.

The pavlova is crispy on the outside and soft and marshmellow on the inside, it has no fat whatsoever because it's made out of egg whites, caster sugar, and vinegar (only a tiny bit), it's a very popular dessert here in New Zealand and in Australia.

    Topping ideas:

1 - low fat whipped cream with kiwifruit and passionfruit pulp or lemon curd

2 - mix low fat marscapone with some icing sugar or splenda to sweeten to taste add about 2 teaspoons of grated lemon rind and fold into the marscapone, top the pavlova with this mixture and top with sliced mango

3 - low fat whipped cream, mixed berries and a few toasted chopped almonds

Here's a great recipe link for the pavlova: http://www.taste.com.au/recipes/23981/pavlova
