I mix whatever's in the fridge - fresh fruit and vegetables - a teaspoon of balsamic vinegar and splash of olive oil. Awesome!

You may put rules to it, but your body will know the calorie content. And i have had some awesome 800 to 1200+ calorie salads.

I've had a salad that was 1,000 calories. A "splash" of olive oil could be a few hundred calories, so weighing that or at least using a measuring spoon is a really good idea.

Yes, one rule, check the calories.

And well, some salad ingredients are best eaten in small amounts.

I made a delicious salad last night that was easy and healthy. Tuna niciose: Mixed spring greens with herbs, albacore tuna, hard boiled egg, grape tomatoes, nicoise olives, blanched green beans and roasted potatoes with homemade vinegarette (olive oil, rice wine vinegar, shallots, dijon mustard, honey, salt and pepper). 480 calories total and oh so yummy.hx38jrkqf2g8.jpg

You're right, I was being too liberal with the term "splash of olive oil". I do keep it to less than half a teaspoon of oil. I want to try the olive oil misting spray that I've seen. You really need a very small amount of oil in salads to release flavours from some vegetables.

My only rule is "no leaves."

Yesterday my sister made a 900 calorie salad with all the healthy things like kale, quinoa, chicken, mushrooms...etc. There are rules to a healthy salad if you wish to stay within calories.
