Bear with me. I wouldn't have believed it either until I experienced it. I planned to make a vinaigrette potato salad and I had a bag of spinach that absolutely needed using. I can only digest cooked and wrung out spinach. So, into the potato salad it went.

The spinach taste was negligible, the mouth feel was creamy. Go figure.

Spinach prep: take a bag of pre-washed spinach, microwave according to package directions, cool, wring out, and chop.

    Thanks for this information! I will definitely be trying- healthier and ok for my daughter who has an egg allergy.
