    thin slices of Hillshire Farms Pastrami, Swiss cheese, sauerkraut roasted in the oven until caramelized, and a sauce of reduced sugar ketchup, olive oil mayo, worshy, and dill relish. My low carb take on a reuben.

    It was! It's my typical Sat night dinner I make for myself. I'll admit that the potatoes aren't homemade. I buy them pre-made at grocery store in the deli section. They're super yummy and it's just too much of a hassle to make them from scratch. I cooked the steak and asparagus.

    I made scalloped potatoes once I thought it was fun

    I think I'll be a copy cat and make what you're having one day

    Taters. Potatoes are a very good source of potassium. Awaking at 2 a.m. 2 nights ago with pain in my lower legs, I spent time reviewing my food diary to see if some nutrient was missing. I found that I had made food choices which left me greatly deficient in potassium for the past several weeks. Searching on the USDA database, I found that among the very good sources of potassium, I had plenty of potatoes on hand. Resolved: Whereas waking at 2 a.m. with electrolyte deficiency sucks, Be It Hereby Decreed that jeromebarry1 shall have potatoes each day.

    We're total idiots over here. My husband and I rode bikes several miles in 94 degree heat to eat at a comfort food type restaurant, lol. I had meatloaf, pea salad, and some sort of chocolate pudding Oreo thing. It was a terrible idea because we both felt sick riding home, from the combination of heavy food and the heat.

    Kind of still worth it though. I was way under on calories the past two days because of extra activity & being super busy, and that almost never happens.
