Meatless Monday (1200 cal)

Hi!

Today I start doing Meatless Mondays (I think it will do good to my body, kind of to "reset") and I always wanted to do it... kind of a personal goal.

I need help with ideas to make this a habit... Today for example I will Have:

*Simple Chia Pudding
*Homemade Bean Salad
* 2 slices of avocado toast
* *Snacks: 1oz almonds, greek yogurt and a banana

Can you please share some meatless ideas? I am eating 1200 calories ;)

    Is there a "Sweetgreens" near you? Their foods are some of the best veggie meals I've had.

    Omelettes, or eggs (frittata, shakshuka)
    Soups - something with beans or lentils
    Curried vegies/dahl with rice
    Substantial salads with protein, fats, perhaps grain (like quinoa)
    Homemade pizza
    Smoothies
    Stuffed mushrooms
    Tofu something (don't know, don't eat it!)
    Protein pancakes

    I'd just make what you usually make for dinners, and replace the meat with a veg protein source (legumes, tofu, seitan, something like that) and not try to over complicate things by changing too many things at once (unless you really want to).

    Op I only eat meat 3-4 times a week now but my diet hasn't changed that much-I just use beans daily now etc.

    You should really try to get a little more protein. Tofu? What kind of meatless Mondays are you practicing? Do you eat seafood, eggs?

    Not much into tofu/seafood

    Eggs yes please ;) yes I am looking for ways to keep it high protein

    I do meatless Saturday, but I don't worry too terribly much about hitting my protein goals on that day, it's hard for me to do without going over on calories. I'm nearly always over on protein on every other day so I don't worry about it too much.

    I eat a lot of beans and whole grains and Greek yogurt and cottage cheese on that day. Endless ways to mix it up.

    You-tube videos- there are so great ideas for going meatless- plenty of vegan or vegetarian meals etc.

    It's a good idea. Helps you think outside the box and introduces you to new things that may become some of your favorites. Most of my week is meatless due to preference. You don't need meat for things to taste good.

    The way I like to eat it: I have romaine hearts on the side and spoon some of the salad into the smaller leaves eating it like a finger food. It's almost like a ritual. Larger leaves I just munch on between bites without any dressing or additives because I have the palate of a rabbit.

    I have rice pudding or semolina porridge for breakfast sometimes, or even barley grits.

    Lentil chilli beats regular chilli in my book, and simple roasted smoked paprika cauliflower is an amazing snack.

    Try to branch out and not just fall back on things you already know.

    At Costco I buy these frozen bags of quinoa and kale seasoned with olive oil/garlic, 5 minutes in the microwave, then I put a"fried" egg on top. Very yummy and filling.

    Shakshuka is pretty tasty, depending on how you make it. And it can be used for any meal. Many recipes for if run a search engine search. IIRC, a two egg serving of that includes onions, bell peppers, and white beans runs somewhere in the 300-380 calories neighborhood.
