Today is my evening class too! What are you taking? I'm working on my Accounting Certificate, so tonight is Financial Accounting II. Luckily my husband is home to make me dinner tonight or I would be eating something quick too.0 -
SUSHI tonight
Very excited.
I LOVE Edamame and tuna, salmon and octopus sashimi. Most raw assortments are quite low in calories, until you get into oily fishies like makerel and eel.
I can usually eat a very satisfying sushi dinner for less than 600 cal.

Unfortunately I very rarely am able to preplan our dinner's (saying that I have taken a pheasant out of the freezer for dinner tomorrow) roasted pheasant yummmy.
We had Lamb steaks, almost :blushing: dry fried with mushrooms, a small mixed salad with olive oil and balsalmic vinegar , baked potato and philedelphia light.
It was a lovely filling meal :drinker: and all for under 620 calories  yeah space for pudding

I had a hard time deciding because I have an exam today and then straight to work so I really had to make it in advance since I hate buying fast food or something like it. My dinner is:
1 maple lodge farm teriyaki chicken breast
1 package of green giant garden medley vegetables
1 package of green giant steamed broccoli and carrots0 -

1 clove garlic
1/2 t salt
1 t grated lemon zest
2 T lemon juice
2 t olive oil
2 t chopped fresh herbs of your choice
1/4 t pepper
2 chicken thighs
fresh veg of your choice ( I am using butternut squash and green beans, the recipe I got this from uses 1 sweet potato and 1/2 bunch asparagus)
Preheat oven to 450. Coat baking sheet with nonstick spray.
Chop garlic, sprinkle with salt and use the side of your knife to mash into a paste. Transfer to bowl and stir in lemom zest, oil, lemon juice, hebs and pepper. Add chicken thighs and sweet potato slices (if using that) and toss to coat.
Place on baking sheet in one layer. Scrape any mixture in bowl over top, cover with foil and roast e0 minutes. Uncover, add other veggies and roast another 10 minutes, or until chicken is done.
This is really good, and quick to make...maybe about 30 minutes total.0 -

Stuffed green peppers, 337 calories with 26 g protein. Meat, veggie and rice all in one tasty package!0

Probably a slice of toasted baguette, an artichoke dipped in vinaigrette, sole meuniere (sauteed with lemon and butter), two or three glasses of excellent wine, and half a chocolate souffle for dessert.
I wonder if it's worth losing 10 pounds if I can't eat like this anymore. Probably not.0 -
Don't know. My daughter has dance until 7 pm. It's a 45 minute drive home. It will be on the road. I've got 800 calories to use up.:huh:0

Tonight I'm having...
Spaghetti Squash
Spaghetti sauce
Vegetarian sausages
Mmmmmm
It's rather garlic-y because I used 2 cloves of garlic with the olive oil when I pan fried the sausages. Sooooo good.0 -

Happy too,,, but this is my invention/adaptions of other recipes I have tried...really good but no "real" recipe...just a disclaimer:happy:
Makes 6 pepper halves, 2 per person. Nutritional values via nutritiondata.com.
3 medium green peppers
8 oz ground beef
1/2 diced medium onion
1 cup brown rice, cooked - I use quick cook rice made with a sprinkle of chicken bouillon
1 can diced tomato, partially drained
1/4 cup grated hard cheese, I use peccarino but parmesan also good
2-3 cloves garlic
Seasonings I used with this..italian seasoning, dried basil, black and red pepper and kosher salt
Split green peppers in half, pulling out seeds and any white ribbing, so there are 6 halves. Set in 9x13 pan and season with salt and pepper. Cook groud beef with onion and garlic, drain well when done. Add diced tomatoes and seasonings, cook about 5 min. Add brown rice, stir well and adjust seasonings. Add mix to peppers, sprinkle with cheese. Cook in 375 degree oven for 35-40 min until peppers are soft and mix is slightly crunchy on top.
