Should I eat all my calories?

I've read where it states men & women have a minimal amount of calories they should AT LEAST eat a day. My question is what should I do if I find myself not meeting this requirement? Should I force myself to eat so I can have those calories ? Also what could possibly happen if I'm not eating the minimal amount of calories over a period of time? Lastly what is the minimal amount of calories for a male? I'm 5'8'' 270lbs 24 years old

If you go to the goals section of mfp it will let you input your information. Yes you should try to eat as close to goal as possible. Undereating long term can cause many issues such as brittle hair and nails, lose of lean mass (muscle), hormonal changes(think testosterone and mood swings), bad skin, brittle teeth and bones, heart and organ damage, inability to concentrate, lethargy, death, I think you see the point that it's bad.
If you have trouble reaching your goals there are many high calorie foods and I'm sure eating some peanut butter, nuts, avocado, or other high calorie low volume foods wouldn't make you miserable. 2tbsp(32g) of peanut butter is almost 200 calories. Good luck and be kind to yourself3 -
Also make sure weigh everything you likely are eating more than you think.

For your stats you're in the Obese category at a BMI of 41.1, to lose 2lb per week which is a good healthy rate of loss for your current weight you don't want to be eating less than 1700 net calories per day (meaning 1700 + exercise calories - or at least some of your exercise calories if using MFPs database).
Even adding a little oil or butter to your foods can increase your calorie intake.
