Omelettes with 1-2 whole eggs and a few whites. Loads of vegies. A bit of cheese - yum!7

I am a vegetarian so I can understand how hard it can be at times....Eggs are essential, especially since they come in the perfect travel case!
I love breakfast so frequently I will add a poached egg to a baked potato, add some pan cooked broccoli, black beans and salsa! Also, for quick meals I use "LightLife" sausages and make sausage and peppers (add onions, asparagus and anything else in the fridge). Black beans are great on anything...as for tofu, keep it in the fridge. There is a brand that I use "TofuBaked" that comes in some different flavors and I add it to my homemade soups. Makes it easy at work as well.3 -
Black Bean Burgers with Veggies
I'm vegetarian as well and I love this dish! Black bean burgers with vegetables like onions and garlic and bell peppers are healthy and great for your body. Beans and some vegetables also help you lose weight so that's a plus.
Just mash some beans up, add Wocestershire sauce (vegan), chopped onions and onion seasoning, grated garlic and garlic seasoning, green bell peppers, a tiny bit of salt and anything else healthy you want to add. Let them cook for about 6-7 minutes on each side.
PS. be sure to sauté the onions and bell peppers.2 -

Shakshuka. The general recipe I use is to sautée an onion in some olive oil. Once those are translucent add 2 teaspoons of smoked paprika, a teaspoon of cumin, a teaspoon of cayenne (I like it spicy, but you may want to use less), some garlic powder, onion powder, and tomato paste. Then add a can of diced or crushed tomatoes, and let it simmer for a about a half hour until it thickens. This is optional if you don't eat eggs but you can then make 4 little nooks with a wooden spoon and crack eggs into the books, finish in the oven until the whites are cooked through. The eggs will make it higher protein.3

I love PF Chang's vegetarian lettuce wraps. I've not been too impressed with my previous attempts at preparing tofu recipes at home, but this one is delicious.

My recommendation for tofu is to cook the hell out of it to get the moisture out. Then you can get a chewy or almost crispy texture. Make sure to stir/flip often to not burn it if you go hot/fast (when frying).0
