Initially I used the number than MFP gave me. When that proved to be too low, I increased it by 100 or so until I found a level that kept my weight stable.

Update your weight in MFP and set to maintenance. It will give you the new calorie goal.

I increased by 50 multiple times until my weight stabilized in a range where I was comfortable with my body, my eating habits and my activity level.

I'm still trying to figure out my maintenance as well. I think it will take some time to see what will work for you.. I've increased it about 200-300 calories. But I will adjust it after a while if necessary.

I've been on maintenance for about 3 weeks now and I've been eating about 300 calories more a day. Mostly just eating bigger portions of the foods I was eating before.

After the initial goal set up I always manually set my calorie goal, a feedback loop based on actual results rather than estimations.

You can estimate based your deficit based on recent rate of loss or simply walk up your calories slowly. In reality whichever way you estimate your eventual maintenance calories some fine tuning will probably be required.
Of course if your weight loss followed the projections then the maintenance estimate has a high chance of being somewhat accurate.

Try to trust the numbers and not react to normal weight fluctuations which might be out of line with the actual calorie increase. It may take time to precisely nail down your actual maintenance so be patient!

Some people find they retain water for a few days. It depends on what your diet was like before, I think.

Some people have a water weight blip (fully replenishing glycogen and the water that binds to it) - some don't.
I don't but I don't go low carb or have a large deficit.

It is not unusual for your weight to go up a bit when you go to maintenance as you are fully replenishing glycogen stores...you will also have more inherent waste in your system from eating more, etc.
