The worst part of eating healthy is that it can get boring. What are some of your favourite healthy recipes?

Ditching the whole idea that I'd have to eat in a particular way to lose/manage weight and improve/maintain health, has been one of the best decisions in my life. I keep a stable weight, effortlessly, I feel more energetic, and just live a happy life with a lot less worry and anxiety. Now I have a different strategy: I aim to eat balanced and varied, and to eat meals I enjoy, deeming no foods off limit, and to allow myself to enjoy everything I eat. I don't use a lot of recipes, and I mainly use them for inspiration/general instructions. So I have NO healthy recipes. I also eat around 50% of my calories for dinner, so 350 calories would be a "lunch" for me.2

Go to the store and buy a veggie or item you have never eaten before, then google a recipe on it. That keeps things fun for me. (just an idea). I now make a recipe of acorn squash stuffed with quinoa regularly.
I have Farro now and looking up recipes.

In my version of healthy, I've been making lots of different ground turkey recipes using all sorts of spices. I've made ground turkey pasta sauce (it might be spicy, it might not), but rather than use any pasta, I use zucchini or yellow squash noodles in its place. You can also use spaghetti squash. I've also made Asian turkey meatballs (ground turkey, panko bread crumbs, sesame oil, egg, cilantro and scallions) and served those with the vegetable noodles and it works out well with for me. My spouse doesn't eat meat, so I've also used vegetarian type protein in place of ground turkey for the recipes. I think it is a process of experimentation with different types of spices and seasonings to make things not the same day in and day out.0

I really like using cauliflower instead of rice to have something low calorie and loaded up with veggies. It's very filling and satisfying. I really like fried cauliflower rice. You just go easy on the oil. I also really like dirty cauliflower rice. They're quick and easy to make, really easy to find recipes by googling them. I like to buy the cauliflower already riced in the frozen veggies section.0
