This is such an easy and yummy twist on traditional banana bread (and no butter or shortening!)! Feel free to change ingredients... I've made it a million different ways. You could use all fat free cream cheese and egg beaters to make it even lower calories, but this is the way my family prefers it. :) I've also added ground flaxseed and wheat germ, but this is the basic recipe. And of course, they love when I add mini chocolate chips to it!

    Cream Cheese Banana Bread

    4 T. 1/3 less fat cream cheese (1/2 of an 8oz package)
4 T. fat free cream cheese (1/2 of an 8 oz package)
    1/4 cup white sugar
    1/4 cup brown sugar
    2 ripe bananas (medium)
2 eggs (or use egg beaters if you prefer)
2 cups of Aunt Jemina whole wheat blend pancake mix
    1 T. cinnamon (optional)
(optional- mini chocolate chips or walnuts, not added in for calorie count)

Preheat oven to 350*. Soften cream cheeses. Beat cream cheese with white and brown sugar until smooth. Add in bananas and eggs and beat until mixed well. Add in pancake mix and cinnamon if desired. Add in other additions such as chocolate chips or nuts if desired.
Bake in one large bread pan or 2 smaller pans. Can also be made into muffins or mini muffins, you will just have to watch the baking time.
Baking time for one loaf- 45-50 minutes. 2 smaller loaves- 30-35 minutes. Muffins- 15-20 minutes.

    3g fiber/
    2g sat fat

This makes 12 servings. I usually make a double batch and get closer to 30 servings for that.

Hey, I was wondering how much is one serving? Thanks!
