Good meals that are meat free?

Looking for meal suggestions/recipes that are dairy and/or meat free. Thank you in advance!

Any balanced meal made up of foods from the other food (sub) groups will be acceptable: Fruit, vegetables, starches, fats and oils, eggs, fish and other seafood, beans and pulses, nuts and seeds. A varied diet is best for everybody. Meals you like is best for you.
If you're looking for recipes, be specific. Google "non dairy" and "vegetarian" and the kind of meal you have in mind.
If you're not sure if you need to avoid meat/dairy, I wouldn't bother, to be frank.1 -
A lot of Indian meals fit the bill because of Hindu and Sikh dietary restrictions.

I am a vegetarian.
This is a meal I make often.
It freezes really well.
I have logged it and it is around 75 calories a large bowl.
LENTIL AND VEGETABLE SOUP
200 Gm dried red lentils
I tin crushed tomatoes
Half wombok (shredded)
2 lge brown onions ( diced)
2 lge carrots (grated )
200 Gm mushrooms ( sliced )
1 litre vegetable stock
2 tablespoons curry powder
1 teaspoon crushed garlic
1 teaspoon paprika
Salt
Papper
In a large pot stir onions and mushrooms in a little olive oil for five minutes. Add garlic, curry powder, tin tomatoes and vegetable stock. Add all other ingredients and stir well. Cover with enough water to just come over the top of ingredients.
Stir thoroughly.
Place on lid. Bring to boil.
Cook 20 minutes.
When cooked stir well. Use a stick blender to thicken slightly.
Taste soup to check for seasoning.
When soup is cool it is able to be frozen.
Makes approximately 8 bowls.
( You can add other vegetables. Is ideal to use up any vegetables that are wilted. )1 -
Eggs- scrambled, fried, poached, omelet
Oatmeal
Pasta- with marinara sauce, peanut sauce, lemon sauce, vegetables or beans, pasta salad, zucchini balls, vegetarian lasagna
Salad with raw of cooked vegetables, fruits, beans, greens, nuts, seeds
Potato- baked potato, roasted potato slices, potato and lentils or beans, potato salad, mashed potato
Beans or lentils- vegetarian chili, black bean soup, fassolatha, veggie burgers, hummus, 3 bean salad, 7 layer dip, lentil soup, lentil loaf, bean burrito, falafel
Soup or stew- vegetable soup, minestrone, tomato, ratatoullie
Roasted, sauteed or grilled vegetables- broccoli, squash, asparagus, corn, etc

My favorite is probably coconut curried red lentils with potatoes and roasted cauliflower...
Also, Pinterest is your friend here...that's pretty much where I get most of my ideas for pretty much anything culinary...0 -
Indian food!
Heavy on pulses and veggies.
Works wonders if you're ovo-lacto (ie egg and dairy) vegetarian. Still kinda works if Vegan but a bit more restrictive0 -
I'm a veggie and my faves are 3 bean chilli, lentil cottage pie, spinach and sweet potato curry, pasta with chunky veg sauce, patatas bravas, jacket potato topped with salsa, italian bean stew, burrito bowls, quorn sausage casserole (based on Hairy Dieters Great Sausage Casserole), bombay potatoes. Google any of these and you'll get loads of recipes for them.
