Cauliflower Tots

I bought some from Green Giant. They're pretty good and creamy as well. But I wondered what was in them that made them creamy. Still don't know.
Anyway, I decided to make my own. First go-around was pretty pathetic. I followed the youtube recipe to the tee and ended up with MUSH with a crispy outside. Not my thing. And they looked like golden yellow turds.
So here's my altered recipe. I just ate some. They were recieved well by the family as well. So here goes:
preheat oven to 375
1 bag cauliflower pearls, pulse in batches in processor, all but 1 cup.
heat in microwave for 3 minutes
Let cool and then squeeze excess liquid in a t-towel
Place in bowl with:
1/4 c. panko bread crumbs
1/4 c. shredded white cheddar cheese
1 large egg
1 tsp each salt, paprika
1/4 c. dried minced onion
Mix well. Then form into tots using a cookie scoop for amount
Bake for 10-12 minutes til golden, gently turn and bake another 3 minutes
Let sit for 1 minute then serve

How big is the bag of cauliflower? Can I use fresh?0

I used fresh cauliflower in my recipe but I have to tell you the calorie count is lower on the recipe than in the Green Giant version. A "bag" of pre-riced cauliflower is about a pound.0

I bet these would be great in the air fryer! (I love that thing!!)0

I tried my own in an air fryer and discovered they just didn't have enough room. Oven baking, however, allows for more room and a larger quantity to be cooked at once. Just a thought
