Mixed Bean & Brown Rice Salad. Serves 4.

1 cup uncooked brown rice. cooked and drained.
1 can five bean mix. drained
1 cup green beans, cooked
1 cup parsley, chopped
1 punnet cherry tomatos, halved
4 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1 taplespoon dijon or whole grain mustard
1 red onion, sliced

add together!

427 calories a serve (: or have a half serve with some meat.
