Paleo freezer lunches and dinners

On Sundays, I like to cook for the whole week. Dinners I can do... Though it´s usually a full day of measuring everything and dividing it into portions. Lunches on the other hand, I find them to be very difficult.
Get some leftovers you say? Usually my dinners are filled with (healthy) fats... If I'd eat them for lunch as well, I'd eat too much fat to stay within my macros.
Does anyone know any easy cheap lunches with lot of veggies that are Paleo and not a salad? With cheap I mean that I don't have the money to eat smoked salmon each day.
I've been browsing websites for ages but just can't seem to find stuff that really works for me. It must be easy to divide into portions and freeze well.

Tofu and veggie stir fry. Not a lot of fat and reheats well. Kind of a pain to prep, though.
ETA: I just googled a couple that I'm going to link below, but looks pretty customizable, and tofu is pretty cheap.

Also look into casseroles or veggie soups. Maybe lasagna, or burrito filling that you can wrap into a tortilla after heating up. Anything pasta based seems to do well when reheated.

This is my favorite and it freezes great.
Mexican Crockpot Soup
Ingredients:
2 lbs boneless chicken breasts (I use three)
1 ½ cups chopped red onion
1 ¼ cups chopped red bell pepper
¾ cup chicken stock
¼ cup chopped cilantro
1 Tbsp Cumin
1 Tbsp Mexican Oregano
2 Tbsp chopped chipotle chile in adobo (I add more)
6 cloves of garlic, roughly chopped
2 (28oz) fire roasted tomatoes
1 (4 oz) chopped green chiles, undrained
Salt and pepper
Optional:
Zucchini, green beans, spinach, cauliflower…or any other vegetable you like.
Instructions
Crock Pot
Add everything but the cilantro. Cook on low for 4-6 hours. Shred the chicken. After I shredd the chicken, I add more stock. I also add a bunch of zucchini, green beans, spinach and cauliflower and put in on sauté for a few minutes. Add cilantro.
Instant Pot
Add everything except the cilantro in the Instant Pot and stir it up
Cook on manual for 18 minutes NR
Shred the chicken

Maybe use a tad less fat in your dinners so you can "afford" more than one serving per day if you take leftovers?0
