I have read that sunflower oil isn't the healthiest oil to use when frying or cooking but is a can of tuna with a little sunflower oil OK?

It's fine. Just don't use too much, or eat deep fried foods too often. In fact, don't eat anything too much or too often.1

Are you counting the calories in it or are you asking if it's ok to eat a little without tracking. Oils are high calories for little amounts so as long as you are measuring and tracking, of course it's fine.1
