Summer Salsa Dip

This is my new fav to make a big container of and keep chilled for snacks, or to take as a healthy plate to a bbq or nibbles
Summer Salsa:
Chop into little wee pieces and combine in a bowl:
1 mango
1 - 2 cups crushed pinepapple (drain juice)
1 red onion
1 large red capsicum
The rind of one lime, grated (some juice too if you like!)
Jalapeños or Chilli flakes to taste
3/4 cup finely chopped parsley.
Stir is up and you're done.
Makes an amazing snack with cheese and rice crackers
Or serve with whole wheat corn chips or toasted pita and lite sourcream as a healthy nibbles plate or snack to watch the game
One tsp = 11 calories and is all fresh produce
Makes about 30 tsps
