Chicken parmigiana and fries. I will spend several hours walking a day just to have the calories to enjoy this decadent meal.

Cajun chicken pasta or spaghetti and meatballs. Fortunately I've got recipes for both that keep them in my calorie limits so I can have them regularly.

    At the monent, pork belly.

Bought a 9# slab of it recently at Costco, divided it in 3, froze 2 of them and made a couple of different recipes w/the 3rd.

Chinese crispy roasted pork belly (siu yuk) and braised Korean pork belly cubes. Yum!

    It's wreaking havoc w/my macros (40% fat?
& where'd all the protein go?) but I'm staying under my daily cal limit and am having fun learning what I can make out of it.

Making my own cured/smoked bacon probably will be next. :)
