hey guys need some ideas other then sandwiches / wraps

    You could always wrap the chicken around something....like a pickle spear, with a bit of laughing cow cheese!?
    Or, shred the chicken onto a salad....
    Or wrap around sweet pepper sticks and dunk into something delish. :)

    make chicken salad.

    i make a standard chix salad with greek yogurt instead of mayo, add some celery, onions, pickles or relish, whatever I have around, sometimes a hard boiled egg.

    I also make a Mediterranean variation with feta cheese, olives or capers, lemon juice, olive oil, fresh oregano, roasted red peppers.

    I also often make Molly Wizenbergs chickpea salad - which you could definitely add chicken to. Google that recipe from Bon Appetit, I changed it slightly to use less oil and cheese.

    I usually just eat these chicken salads plain (meaning not on bread as a sandwich)

    You could also toss it with some pasta and tomato sauce, add it to a veggie filled salad with dressing, eat it cold with some hot sauce, pretzels, cheese and a pickle.
  • Misubi or onigiri. A.K.A rice balls. Or sushi rolls. (High in carb though)
