Welcome to the fortieth round of the cooking challenge! This week's ingredient comes to us from wannabahotmom, the winner of the kiwi cooking challenge.
This week's challenge is JALAPENO.
These are the rules for the challenge:
1. You don't need to have created the recipe from scratch, but you DO need to make it.
2. Voting will be put up for the challenge and the winner of the challenge will pick the next ingredient to be used.
3. Pictures are encouraged but not required. If you want to post a picture upload it on a website like photobucket.com or tinypic.com . If there's any questions about how to do that, don't be shy to ask me.
4. You do need to post the recipe you used so other people can try it too, if they so please.
5. If you used a recipe from another source give credit to the original creator!
6. Your recipe can be a breakfast, lunch, dinner, snack, or dessert! Anything!

NAME OF RECIPE: Jalapeno Turkey Burgers
INGREDIENTS:
16oz Ground Turkey, 93% lean
2 Jalapeno Peppers, finely chopped
1/2 cup Fresh Cilantro, finely chopped
1 Egg
1/8 cup Italian Style Bread Crumbs
2 tsp Worcestershire Sauce
1 tsp concentrated beef stock / soup base
Salt and Pepper, to taste
4 Pepperidge Farm 100% Whole Wheat Sandwich Thins
Optional:
4 Reduced Fat Pepper Jack Cheese Slices
1 medium vidalia onion sauteed with 1 cup of chopped shiitake mushrooms
12 slices of cooked bacon
DIRECTIONS:
Mix the ground turkey, jalapenos, cilantro, egg, bread crumbs, Worcestershire sauce, concentrated beef stock, and salt/pepper thoroughly in a bowl. Separate into four patties. Grill until cooked through (I didn't pay attention to time, but just make sure the turkey is cooked all of the way through. On the Foreman Grill, I believe it was about 13 minutes).
Place on sandwich thin, top with cheese, onions/mushrooms, and bacon, if desired.
CALORIES PER SERVING:
523 calories, fully loaded (with 1 slice of cheese, 1/4 cup sauteed onions/mushrooms, and 3 slices of bacon)
288 calories, "naked"
HOW MANY IT SERVES: 4
OPINIONS ON HOW IT TASTED, ETC:
My boyfriend and I made these together on a whim and loved them. If I don't want to go so heavy on calories, I would cut out the bacon, cheese, and onions/mushrooms.. But quite frankly, those additions make this incredible and I'd gladly spend an extra hour working out to compensate. Mmm mmm..

I do not eat spicy due to medication I am on, but my son loves spicy so I will let him judge. :-)0

NAME OF RECIPE: Spicy Meatloaf Muffins
INGREDIENTS:
1 lb lean ground beef, I used 90/10, calories can be reduced by using 93/7 or 95/5
4 oz shredded pepper jack cheese
1 egg
1 onion chopped,
2 jalapenos, seeded or not, heat is up to you!
1/2 cup salsa, I used a verde
DIRECTIONS:
Preheat oven to 350. Combine all ingredients in a mixing bowl. Spray muffin tin with cooking spray. Spoon mixture into muffin tin, making 8 muffin.
CALORIES PER SERVING:
Calories 166 Carbs 4 Fat 10 Protein 15
HOW MANY IT SERVES: 8 Muffins, 1 per serving

JALEPENO WONTONS
INGREDIENTS:
1 PKG Cream Cheese
1/2 Cup Pickled Jalapenos
WonTon Skins
DIRECTIONS:
Mix cream cheese and jalapenos together.
Put in wontons
Brush with a tiny bit of oil
Bake in Oven until crispy.
CALORIES PER SERVING: 60
HOW MANY IT SERVES: 20

NAME OF RECIPE: Light Jalapeno Poppers
INGREDIENTS:
5 dashes olive oil flavored cooking spray (5 one second sprays)
2 ounces light cream cheese
1/2 cup shredded low-fat cheddar cheese
1 tablespoon fat-free mayonnaise
8 medium jalapeno peppers
1/4 cup fat free egg substitute
3/4 cup corn flake crumbs
DIRECTIONS:
1. Preheat oven to 350ºF.
2. Coat a large baking sheet with cooking spray.
3. In a medium bowl, combine cream cheese, cheddar cheese and mayonnaise; mix well and set aside.
4. Halve jalapenos lengthwise and remove seeds.
5. Stuff jalapeno halves with cream cheese mixture.
6. Place egg substitute in a shallow dish.
7. Place cereal crumbs in a separate shallow dish.
8. Dip stuffed jalapeno halves into egg substitute and then roll in cereal crumbs to coat.
9. Transfer jalapenos to prepared baking sheet and coat with cooking spray.
10. Bake until filling is bubbly, about 30 minutes.
11. Serve hot.
CALORIES PER SERVING: 50

These are so delish! I made them yesterday to bring to my father's birthday party and they were a hit! I tripled the recipe and they were all gobbled down. So yummy & so low calorie! We really loved them. (Found recipe on food.com)0 -

Grilled Stuffed Jalapenos
Ingredients:
Jalapeno Peppers - 7 peppers
7 Tbsp Philadelphia Cream Cheese 1/3 Less Fat (8oz), softened
3.5 slices Oscar Mayer Bacon (cut bacon in half)
Directions:
Cut stem off Jalapenos and use a corer to scrap out seeds and veins. Stuff with 1 Tbsp of softened cream cheese. Wrap with half a piece of bacon secure with a toothpick. Place on the grill and cook till bacon is cooked through. So Yummy!!!
You could use Turkey bacon for less cals and fat if you prefer
