I am going back to work next week and am trying to plan ahead so I can stay in track. Does anyone have any low carb meals that can be cooked in 'bulk', portioned and frozen so I can grab them and take them for lunch? I have 4 kids and only want to have to cook like once a month
I cook for them every night but I don't have time to cook 2 meals every day!!!

Pretty much anything meat and vegetables. If going the boneless/skinless chicken route, you'll want to go with something that has a sauce of some sort or at least bury the chicken pieces under some veggies. (Meat with more fat and/or skin will be less prone to drying out in the microwave if just laying it atop some veggies).
(depending on how 'low carb' you want):
Stirfries
burgundy (or some other wine) chicken/beef over vegetables
chili/soup/stew
etc.

I am trying to stay below 25 or 30 net carbs per day. I may make some cabbage soup. But not sure how that will freeze0

Protein and veg (with a variety of low carb sauces given your preferences)! I make weeks at a time sometimes.0

Keto cottage pie. I made one tonight and it was delicious. You can find many versions if you Google it. I just threw stuff together and made my own. Basically I fried up some zucchini, peppers, and mushrooms in butter and then cooked up some ground beef. Once ground beef was almost cooked I tossed the veggies back in with some garlic chili paste. I put that in a casserole dish and topped it with cauliflower mash. I sprinkled on some shredded cheese and baked it to melt the cheese. Then put it on broil for a bit just to make it a little crispy on top. Wasn't sure how it was going to turn out, but I liked it. It's easy to modify to your taste.1

Skin on boneless chicken thighs... you can bake them all in one large pan ... lay it on top of a broccoli/ cauliflower veg that was steamed with butter.. freeze in 1 meal portions for yourself... I wouldn’t try to make a months worth of this.. you will get sick of eating the same stuff each day.. do it in week long stints ...0

I was having the same issues having kids & being a single mum I decided best alternative to cooking 2 lots of dinners each night was to order my meals keto weekly lunch & dinner from thr1ve although there is plenty of others for me I did my research & this suited me best. As it cost me extra money I started doing a 1 day a week cook up of kids dinners & school lunch baking & snacks instead of buying them, so far saving money & dinner is so easy each night, lots of time left for homework & spending quality time together when I can just heat & eat nutritional meals for all my fam.0
