Gone from 18st to 15st in 2 years by following a slimming world style diet and selling my car and cycling everywhere. My target is 14st but can't shift this last stone. Someone suggested calorie counting, so here I am.

Definitely! As you get closer to your goal, you'll probably find that your rate of loss is slower, and your deficit smaller - this can easily be wiped out by guessing portions or not knowing how much you're actually eating
Being more accurate with your intake will definitely help - get a food scale for all solids, measure all liquids and log everything that goes in your mouth using accurate database entries3 -
Welcome and good luck.1
