Crustless Spinach Pie/Quiche

I saw a posting on here yesterday about a "Spinach Pie" and it made me want to try one, so I googled some recipes yesterday and went home to see what ingredients I had on hand and came up with this. I am eating it for breakfast right now and it is quite good.


Crustless Spinach Pie

1 pkg frozen chopped spinach, thawed & drained
1 diced onion
1 cup low fat cottage cheese
3/4 cup reduced fat mexican shredded cheese (any cheese would be good, this is just what i had on hand)
1/4 cup self rising flour
1 cup Egg Beaters
salt & pepper to taste

Mix together spinach, onion, cottage cheese & shredded cheese. Mix egg beaters and flour together in a seperate bowl. Combine this mixture into the spinach mixture. Pour into a greased pie plate and bake at 350 degrees for 45 minutes.

The onions remained pretty crispy, which I like, but if you do not like that texture, you might want to sautee them before you mix them in.

Four 4 huge servings (1/4 of the pie), it is 184 calories per slice.
Calories: 184 Carbs: 15 Fat: 5 Sugar: 4 Sodium:728 Fiber: 2

For 6 servings it is 123 calories per slice.
Calories: 123 Carbs: 10 Fat: 4 Sugar: 3 Sodium: 486 Fiber: 1

    thanks! my sister made one with a ton of zucchini in it, but it was with crust and full eggs and lots of cheese. it was to die for, but like 300cal for like 1/8th of the pie or something! ive been meaning to rework the recipe without yolks and stuff but you did it for me and without the crust!!! thanks, i think i'll make it now to have for breakfast tomorrow!

    this is her recipe, from a magazine. you could cut out the crust and go for low fat/fat free cheeses or just omit some of them.

    Squash - Zucchini, includes skin, raw, 4 medium 125
    Wholly Wholesome - Organic Whole Wheat 9" Pie Shell, 1 pie crust 880
    Land O'lakes - Whipped Butter, 2 tbsp 100
    Spices - Dill weed, fresh, 0.25 cup sprigs 1
    Eggs - Whole Egg, Large, 3 egg, large 210
    Cheese - Ricotta, whole milk, 1 cup 428
    Cheese - Parmesan, grated, 0.5 cup 216
    Cream - Half and half, 0.5 cup 157
    total calories is 2117, 1/4 pie is 529, 1/6th is 353.

    i made this last night for breakfast today, it was so good!! i added 4 slices of turkey bacon for 100cal extra. thanks! i'll be making this again.
