Hey all. I was wondering if anyone had an easy oven recipe for like a Mexican style bake?

    i like to make something I call tamale pie by slicing up a polenta loaf into medallions. I line the medallions along the bottom of a square pan. Then I smear refried beans on top of that until its covered. Then I add verde enchilada sauce on top and smother the whole thing with mexican cheese. I imagine you could put meat in one of the layers, but I try to avoid meat.

    I recalculated the calories with exact ingredients that I used and came out with 375 per serving.

    What I'm kind of looking for is a baked dish. Someone I know made something one time with beef, doritos, cheese. I wanted to know if anyone had something sort of similiar but healthier?

    Any taco bake you do should reduce or remove the refried beans; they're a very heavy food to try to work around.
  • Layered Mexican Chicken
    2lbs boneless skinless chicken breasts, cooked and shredded or cubed
    30 oz black beahs, drained and rinsed
    3 cups non fat sour cream
    2 cups shredded Montery jack or Colby low fat cheese
    2 4oz cans diced green chilies
    2 tsp ground cumin
    1/2 tsp black pepper
    12 medium corn tortilla cut in half
    1 cup salsa or hot sauce
    Preheat oven to 350
    Combine all ingredients except corn tortillas, and half cup of cheese
    Spray bottom of baking dish with nonstick spray.
    Put down a layer of tortillas, a layer of chicken mixture, repeat.
    Top with remaining cheese.
    Pop into oven for about 30 minutes. Let rest for about 5 minutes before serving.
    Can be made a day ahead, let it come to room temp before putting in oven. Also can be made in two casserole dishes and frozen.
    serves 12, 306 calories

    Mexican Chicken Casserole

    3/4 lb.boneless skinless chicken breasts, cut into bite-size pieces
    1 tsp. ground cumin
    1 green pepper, chopped
    1-1/2 cups TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
    2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
    1 can (15 oz.) no-salt-added black beans, rinsed
    1 tomato, chopped
    2 whole wheat tortillas (6 inch)
    1/2 cupKRAFT Mexican Style 2% Milk Finely Shredded Four Cheese, divided

    HEAT oven to 375ºF.

    COOK and stir chicken and cumin in nonstick skillet sprayed with cooking spray on medium heat 2 min. Add peppers; cook 2 min., stirring occasionally. Stir in salsa; cook 2 min. Add Neufchatel; cook 2 min. or until melted. Stir in beans and tomatoes.

    SPOON 1/3 of chicken mixture into 8-inch square baking dish; cover with 1 tortilla and half each of the remaining chicken mixture and shredded cheese. Top with remaining tortilla and chicken mixture; cover.

    BAKE 20 min. or until heated through. Sprinkle with remaining shredded cheese; bake, uncovered, 5 min. or until melted.

    Serves 4 at 350 calories
