Mini Spinach Quiches.

Ingredients:
2 large eggs
3 large egg whites
4 oz. part-skim ricotta cheese
1/2 cup of part-skim mozzarella cheese
1 cup of milk
1/8 cup of grated parmesan cheese
2/3 cup of finely chopped onion
1 clove of garlic, grated
10 oz. of thawed frozen spinach
1 tbsp. of olive oil
Directions:
1) Saute the onion and garlic in the tablespoon of olive oil until translucent.
2) Add the spinach in the pan with the onion and garlic and warm throughout.
3) Add the mozzarella cheese and the grated parmesan cheese to the spinach mixture.
4) Get a bowl and combine the eggs, egg whites, milk, and ricotta cheese together.
5) Mix the spinach mixture in the bowl with the egg mixture.
6) Get a cupcake pan and pour the mix into fifteen cupcake wrappers.
7) Bake for about twenty-five minutes and enjoy!
