Hi everyone: I am having a bit of a sweet craving and feel like doing some baking :laugh: Does anyone have any easy and healthy oatmeal cookie recipes? :flowerforyou:0

Bob Green's Soft Peanut Butter Cookie
Serves 4
14c smart balance peanut butter
1/2c rolled oats
2 tbsp fat-free milk (I used soy milk)
1 tbsp honey
1/3 tsp baking powder
1 tbsp sugar (I used organic, you can use what you prefer)
Preheat oven to 350. Combine all ingredients in a food processor for 30 seconds or 1 minute in a mixer.
Separate the dough to make 4 cookies and place on a cookie sheet. Flatten with your fingers until each is apprx 3 inches in diameter. Back until golden brown, about 10 minutes. I let mine bake for about 15-17 minutes because I like a crispy cookie.
Per serving: Calories 170; Protein: 5g, Carb 18g, Dietary fiber 2g, Sugars 8 g, Total Fat 9 g, Sat Fat 9g, Cholestorol 0 mg, Calcium 32 mg, sodium 89.
I ate one a day. Good not to have a dozen or I would have eaten the entire batch!!Hope it works for you. Easy to make. Taste pretty good.
