Slow cooker recipes?

I’m a student and next semester I have a couple days where I’m in class all day and into the evening. I’d like to utilize the crockpot more on those days, so I don’t come home and eat junk.
I’m looking for some go-to crockpot recipes please!

    Made this jambalaya yesterday. Goes together quickly. Tasty and warming. Adjust the spices to your liking. Plenty of options for low fat version. Serve with rice if you prefer.

    Here’s a recipe I enjoy.
    Slow Cooker Salisbury Steak

    Prep time: 10 mins
    Cook time: 5 hours
    Total time: 5 hours 10 mins
    Ingredients
    Follow Spend With Pennies on Pinterest for more great recipes!
    * 6 oz sliced mushrooms
    * ½ onion, sliced
    * 1½ cups beef broth (low sodium)
    * 1oz package brown gravy mix (dry)
    * 2 tablespoons ketchup
    * 1 teaspoon dijon
    * 2 tablespoons fresh parsley
    * 2 tablespoons corn starch
    * 4 tablespoons water
    Beef Patties
    * 1½ lbs lean ground beef
    * 1 egg yolk
    * ¼ cup minced onion
    * ⅓ cup Panko bread crumbs
    * 3 tablespoons milk
    * 1 clove garlic
    * salt & pepper to taste
    Instructions
    1. Place mushrooms & onions in the bottom of your slow cooker.
    2. Combine beef patty ingredients and form 6 patties. Brown over medium high heat (about 3 minutes per side).
    3. Layer beef patties over mushrooms. Combine remaining ingredients except water and cornstarch. Pour over beef and cook on low 5 hours.
    4. Once cooked, remove patties and set aside.
    5. Turn slow cooker onto high. Combine cold water and cornstarch. Stir into the broth and let cook a few minutes until thickened. Add beef back into the sauce to coat.
    6. Serve over mashed potatoes or rice.

    Crockpot Chicken and Noodles
    Ingredients :
    1 24 ounce package – frozen egg noodles
    2 – 14.7 oz cans – cream of chicken soup – sometimes i use 1 can chicken and 1 can cream of celery
    1 stick (1/2) cup butter – cut into pieces
    1 – 32 oz chicken broth – may want extra to thin out, if too thick. the frozen noodles thicken the broth
    mixed vegetables – optional – i didn’t use this time
    Chicken buillon to taste – optional – i add about a teaspoon of better than buillion chicken flavored paste – for a richer chicken flavor
    6 small boneless, skinless chicken breasts or 4 large
    salt & pepper to taste – can add some parsley too if desire

    How to make it :

    Salt & pepper chicken breasts and place in the bottom of crock pot. Spoon soup over the chicken. Cut butter into several pats and place pieces evenly over soup.
    I whisk the bouillon with the broth and pour over soup.
    Place lid on pot and turn to low. Cook for 6 hours.
    Remove chicken and tear into pieces. Add back to pot.
    Now add noodles and if adding veggies add now. Cook for another 2 hours or until noodles are desired tenderness. I stir a few times during last 2 hours. ( You may want to add more broth to thin out at the end of cooking, as the home made noodles thicken the broth, which we like. )
    Sprinkle with parsley and mix in, if using at the end of cooking.
    Salt & pepper if needed and Serve. Yum!

    White Chili with Ground Turkey (chicken)

    Ingredients
    2 pounds ground turkey (chicken)
    1 large onion, chopped
    3 teaspoons of garlic, minced
    1-7 ounce can chopped green chili peppers
    1 teaspoon of salt
    1 teaspoon ground cumin
    1 teaspoon dried oregano
    1/4 teaspoon ground cayenne pepper
    1/2 teaspoon ground white pepper
    1 3/4 cup of chicken broth
    1/2 cup heavy whipping cream
    1 cup of sour cream
    2 cups of extra sharp cheddar cheese
    2 cups meonterey jack cheese (I used (Mexican) taco cheese mix)
    Jalapeño sliced (optional)
    Tortilla chips (optional)


    Directions
    1. In a large saucepan, saute the turkey, onion and garlic in oil until turkey is no longer pink. Add broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
    2. Remove from the heat; stir in cheese, sour cream and cream. If desired, top with tortilla chips, cheese and jalapeños.
    3. If you want to cook in a crockpot: you can after adding all the seasons put in crockpot for about an hour then add step two.

    I brown the beef, add chopped onion and saute. Then I put that in a slow cooker and add everything else., turn to low. You don't have to cook the rice separately either, if you add rice plus whatever water that calls for.

    Variations - red & green pepper are nice combined. Basil is a good add-in. I'm not fond of Campbell's tomato soup (too sweet) I sub out Progresso instead.

    I absolutely love chicken and noodles!! I’ve been trying to find a way to make it a bit healthier. Maybe I’ll just save it for a treat and serve it with a salad
