I want to start this off by saying that I do know that calorie counting works.
My current weight is 75.2 (a few days ago it said 74.2 but it could've gone up because I had a lot of sodium), and since December 10th I've purchased a food scale to make things more efficient.
My time goal would be 1.5-2 years, during which I want to lose 20kg.
My problem is that I want to get to 73kg since that's the weight I was at last year at this time (I gained 3.8kg by August). I've been doing MFP since October but I was bingeing after every few weeks back then (got to 73.9 and ate it back) and now I'm doing well I've made a plan for myself.
My problem is rice, so I've limited rice to only Fridays and Saturdays (if my mom cooks it on any other day I just control my portion a lot and have a lot of bananas to keep myself full)
To eat more food with less calories, I've stopped eating meat (chicken, beef, fish) on Mondays and Wednesdays, and I try to limit roti rice bread and pastas on Tuesdays.
Another addition is that I've downloaded Pacer so I make it a goal to leave 140-200 calories a day (which is a lot since before I'd eat back everything I burnt)
Since restarting on Dec 10, I've lost 5 pounds but I've heard that that's just water weight. Now my problem is that every time I try to lose weight I do lose about 3kgs, but it never gets lower than that, and later I find out that I wasn't actually losing weight; it was just water weight and I thought I was losing pounds but I wasn't. This was because I was making a lot of mistakes in the program, but what if I'm making mistakes right now without realising it?
The weigh-ins right now are a lot like they were on previous weightloss journeys:
Sunday: 74.2
Tuesday: 75.4
Wednesday: 75.2
Thursday: 75.8 before using the bathroom and 75.3 after
It really frustrates me because even though I'm not going to leave calorie counting for at least the next 5-6 months, I want to see some results. My goal was to get to 73kg by January but I'm not sure if I'll be able to since it keeps going up and down. It's even more irritating that my weight loss is at the same rate as before when I was having binges after every few weeks, despite me putting more of an effort now.

So as your example you post a 4-day stretch. Weight loss takes time, and 4 days is not going to show the changes you want. Be patient. As your own numbers show weight changes day to day are normal (up and down) that have nothing to do with fat loss, but everything to do with other aspects. That is why most people suggest either weighing yourself less often (weekly or every two weeks), or using a weight trend app which will show your over all trend up or down.1

took a quick look at your diary - i see a lot of cup measures and 1 potion etc...so even if you are weighing some food, there are inaccuracies2

I only skip lean meat on Mondays and Wednesdays. Otherwise I eat all sorts of food. I only eat rice on Fridays and Saturdays because I can overdo them sometimes. I eat bananas if I'm hungry but don't want something calorific. When I'm not eating rice I have roti/naan/bread/paratha/pasta. I only skip excessive carbs on Tuesdays.0 -

I take measurements with a food scale and if the measurements aren't available in grams then I use an online calculator to convert those into cups. If the measurments are available with grams/oz then I leave it as it is.
I'm 19 turning 20 and I'm 5'30 -

@deannalfisher I also added 1 portion yesterday because I went to meet someone and i couldn't measure the food over there, but I didnt eat much there so I put in an estimate.0
