Im making my diary public in January to hold myself more accountable. I LOVE cooking and sharing recipes and am new to vegan ideas, alternatives, recommendations... anyone with or without experience in being vegan please add me and we can help each other. I will be posting recipe successes and failures. Thanks!

I am not, but my sister is. She recently visited so I was trying some vegan stuff I had a Beyond burger and some of her follow your heart cheese. I thought both were really good, it seems like vegan products have improved alot in the past few years. From what I understand the beyond burgers are pretty new, so if you haven't tried one yet it might be worth looking into
Vegans typically struggle to get enough protein, so keep in mind beans, nuts and seeds, and soy are relatively high in protein.

I am not but my cousin is. I make this bean salad that I really like:
1 can black beans
1 can kidney beans
1 can great northern beans
1 red pepper
1 orange pepper
1/2 a red onion
Wisk the following:
1-2 tablespoons minced garlic
1/2 a cup red wine vinegar
2 tablespoons of maple syrup
Then dump on bean mixture. Let it sit over night and enjoy.

Check out Appetite for Reduction by Isa Chandra Moskowitz if you haven’t already. All the calories and nutritional info are listed for every recipe and I’m pretty sure every single recipe is under 400 calories per serving. Her style of cooking is very fresh and not a whole lot of “replacement” foods (like calling for vegan premade sausage and then you ruin a whole dish by using some gross store bought vegan sausage you don’t like). I’ve made so many excellent dishes from it, I couldn’t begin to choose a favorite.0
