i think the title says it all...

i'm looking for the perfect protein pancake recipe. preferably one that doesn't involve pre-packaged egg products... there's something about pouring egg whites out of a carton that just doesn't feel right to me!

i have a big tub of genisoy unflavoured protein powder in my pantry and i want to make it awesome, so post your recipes!

For the last couple of weeks i've been addicted to chocolate chip pancakes, and have been using pancake mix and adding in a tbsp of hersey unsweetened coco powder and a few chocolate chips. The calories aren't too bad especially if I've worked out that morning, but the carb count is through the roof. (takes up half my carb allowance) So i've actually been looking for a protein recipe that is lower in carbs. I would be interested in a protein pancake recipe as well.

Just try it out! Half of the fun is trying to make something you have never made before! I would just make sure to add a bit more moisture to your pancake mix.

I'm excited to share my recipe! I was hooked on these and ate them every day for awhile. Hmmm actually I think I will have them for dinner tonight, I miss them :) Of course it's not ihop, but its still pretty good!

1 scoop of vanilla protein powder (plain would be fine)
spoonful cottage cheese...or otherwise to taste
1-2 egg whites (hope it doesn't bother you since its not much, and isn't packaged)
    1/2 mashed banana
    1/4 cup oatmeal
    small handful of blueberries (optional)
    cinnamon
    agave nectar for syrup

    Calories: 308 (248 without syrup)
    Carbs: 38 (22)
    Protein: 35
    Fiber: 3
    Sugar: 27 (11)

i usually mash up the banana first then add everything else except the agave nectar, and stir well. You will have to spoon it into the pan, it won't pour, and stretch it out a little so its not too thick. Cook both sides and add agave nectar. It's different, but my friends have approved the taste test!

EDIT: Okay, I totally just got up and made these pancakes haha! I only had frozen blueberries so I defrosted them in the microwave and added a little bit of splenda for my sweet tooth. When I went to make the rest of the batter, I remembered I usually use 2 egg whites and it was dry, so I used the blueberry juice to help the consistency. Turns out these are the best I've made, and it feels like I'm cheating :)

Even pancakes can still be a part of a healthy breakfast menu with our version of whole wheat, proteinpacked mancakes (or womancakes – wouldn’t want to leave anyone out). Make your own topping with fruit and/or berries. Strawberries or blackberries with or without a little Splenda are always a good choice. Wild blueberries can also be added to the batter before cooking. You could also use cottage cheese and berries for added protein. If the curds of cottage cheese turn you off, put the berries, cottage cheese, and Splenda in a blender for about 30 seconds for a thick, creamy topping.
    Ingredients
    1 cup whole wheat
    pancake mix (any
    variety will do, as long
    as it’s whole wheat)
    2 heaping scoops of
    vanilla whey protein
    powder
    3/4 cup lowfat cottage
    cheese
    3 egg whites (1/2 cup)
    3 tbsp flax seeds
    1/4 cup water
    Prep Time – 20 minutes
    Difficulty Level – Easy
    Servings – 2
    Instructions
Place the egg whites, cottage cheese, flax seeds and
water in a blender and process until smooth. Mix the
wet ingredients together with the pancake mix and
protein powder in a large bowl.
Cook the pancakes any size you like them in a skillet
coated with olive oil cooking spray over mediumlow
heat. After pouring the pancake batter into the
skillet, they will be ready to flip after bubbles form
around the edges (about 5 minutes).

  • This is the recipe I use - it's very basic, and definitely leaves a lot of fun customization options - makes 2 good sized pancakes

2 Tablespoons vanilla whey protein powder (I use Kaizen whey isolate)
    3/4 teaspoon baking powder
    1/2 teaspoon ground cinnamon
    dash ground nutmeg and ginger
    1 large egg, slightly beaten
1 tablespoon water or almond milk

mix dry ingredients and wet ingredients separately - then mix together, and use like normal pancake batter. I like to top mine with a sliced nectarine microwaved for about 30 seconds with a dash of cinnamon.

They're a little dry, so I think in the future I will dabble with adding a bit of sour cream or yogurt to the batter.
