Black eyed peas with ham, onions, and my own touch is a Granny Smith apple which adds just a bit of sweetness. Greens with pepper sauce and cornbread on the side. All the regular forum members who have seen multiple threads asking about apple cider vinegar, well, this is one of those rare instances where it's actually useful. Add a little to the peas when cooking, keeps the taste from being too fatty and heavy.
I made the peas in my new instant pot and I have to admit I'm impressed - twenty minutes from dried unsoaked beans to done. This is normally at least a two hour process. So we ended up having some before midnight, then again after midnight.
Put it over rice and it's called Hoppin John. Reheat the leftovers Jan 2 with some celery, bell pepper, and shrimp, and it's suddenly called Limping Susan.2 -
Started well with a nice vegetarian supper. Then, after 2 glasses of wine.....nuts, cheese, pretzels, olives. Okay, way over calories, but good choices. Then more wine. Then, cookies, cake, fudge and a giant slab of cheesecake.1
