- 2 bags House Foods Tofu Shirataki Spaghetti Shaped Noodles
- 8 oz. raw boneless chicken, chopped
- 1/4 tsp. salt, divided
- 1/4 tsp. black pepper divided
- 1 cup chopped broccoli
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped onion
- 1 tsp. chopped garlic
- 2 wedges The Laughing Cow Light Creamy Swiss Cheese
- 2 tbsp. fat-free sour cream
- 1 tbsp. reduced fat Parmesan style grated topping
Directions
Use a strainer to rinse and drain noodles well. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit with kitchen shears (if you've got 'em), and set aside.
Bring a large skillet sprayed with nonstick spray to medium-high, heat on the stove. Add chicken and season with 1/8 tsp. salt and 1/8 tsp. black pepper. Stirring occasionally, cook until chicken is no longer pink on the outside, about 2 min.
Add broccoli, bell pepper, onion, and garlic to the skillet. Stirring occasionally, cook until veggies are tender and chicken is fully cooked, about 8 min.
Meanwhile, place cheese in a small microwave-safe bowl, and microwave until soft, about 20 sec. Stir until smooth, add sour cream, and mix well. Set aside.
Add noodles to the skillet and stirring often, cook until hot, 1 to 2 minutes.
Add cheese/sour cream mixture, Parm-style topping, remaining 1/8 tsp. salt and 1/8 tsp. pepper to the skillet. Thoroughly mix and then serve it up!
