Vacation and dieting

My husband and I are going to Jamaica in 9 days to celebrate our 21st anniversary. We won't be staying in an all-inclusive, so most of the cooking will be done by me and one of our Jamaican friends. I don't have personal access to an oven/stove, and will be using an electric griddle most of the time. My husband is a picky eater. I'd like to make healthier choices while away from home, but I also don't want to spend most of my time preparing more than one meal at a time. Does anyone have any helpful hints?

Eat as healthy as possible when I went on vacation in July I said screw the healthy choices, accompanied by no gym = 10 lbs gained in a week. Which in turn took me 30 days to lose!!!!!0

take advantage of being in the islands and eat lots and lots of fresh fruit! also try to fit in daily exercise while you're down there, even a morning walk or a night out dancing will help negate those extra calories. have a great time, i am so jealous!0
