Ok...so yesterday I posted 66 calorie chocolate chip cookies which were excellent!!! I got the recipe from chocolatecoveredkatie.com. Tonight just for fun I thought I would try adapting the recipe to make oatmeal raisin cookies. Here is the recipe:
Makes 10 Cookies
(makes 7-12 cookies)
1/3 cup plus 1/4 cup whole wheat flour (can use regular...but will change nutrition facts)
1/4 cup quick oats
1/8 tsp salt
1/4 tsp baking soda (not baking powder)
2T of raisins...then cut the raisins in half
2T brown sugar
2T Splenda (can use white flour...but will change nutrition facts)
1/2 tsp vanilla extract
2T "I Can't Believe It's Not Butter" Fat Free Spread (Can use veggie oil or regular butter..but again will change nutrition facts)
1-3T nondairy milk, as needed (I used vanilla soymilk)
Preheat oven to 375. Mix dry ingredients (including raisins), then add in wet ingredients. Form 10 cookies and bake for about 7 minutes depending on your oven.
Nutrition breakdown:
50 Calories
11 Carbs
0 Fat
1 Fiber
1 Protein
NOT too shabby for cookies....you have leftover calories to have milk! Yummy!!
