Anyone have healthy instant pot recipes? I just got one and haven't used it yet.

One of my favorites so far is Crispy Chicken for a Banh Mi Bowl. It was amazing! I had to substitute equal parts lemon zest and ginger for the lemongrass. This dish would be great for meal prep. The chicken would be great on salad, wraps, sandwiches, just anything. Will keep making this one over and over. littlespicejar.com/chicken-banh-mi-bowls/

I made some pretty great black bean soup the other day.
1 lb. dried black beans
2 poblano peppers, roasted, peeled, seeded and chopped
2 Tbps olive oil
1 red bell pepper, seeded and diced
1 yellow onion, diced
5 cloves garlic, minced
2 tsp chili powder
2 tsp cumin
1 tsp oregano (mexican if you've got it)
7 c. vegetable stock
S&P to taste
Pot to saute, heat the oil, sautee the onion and pepper until starting to soften, add the poblano, then the garlic, saute about 30 seconds. Add the spices and stir, then the beans, then the stock. Stir and cook on manual for 30 minutes, NPR. Season to taste.
6, servings, approximately 330 calories per.0 -

I use mine to cook plain shredded chicken to eat on salads or recipes throughout the week. I've also cooked corn on the cob in it and made a lentil and bean soup using the slow cooker function. It didn't make the lentils mushy like my regular slow cooker!

It's not low-carb, but it's fairly low-cal since there is no cream or milk in it. I would add a few minutes to the cooking time, though, because my dumplings were a little raw in the middle and needed some extra time.0
