Hi there,

I think a lot of reaching our goals is keeping in mind what healthy meals look like, so I will usually share my meal ideas each day. If you want to see too, then you can send me a friend request. I almost always use only fresh products, so no prepared foods or packaged foods, and the meals are usually quite easy. Once a week or so I will do a challenge recipe and make something more complicated.

So if you are a foodie, or someone who has no idea what to make for dinner, then lets connect and I can share what I can share :-)

I am also looking for anyone else doing the same so I can get ideas too!

Cheers, Christy in the Netherlands

    Hi!

There are a few cookbooks that I love. I eat clean (and even must avoid gluten, dairy, and soy). The cookbooks I find are usually easy to modify, or I just cook them as is.

Anyway, search for any cookbooks written by Tosca Reno- I especially like
    The Eat-Clean Diet,
    The Eat-Clean Diet Recharged,
    The Eat-Clean Diet Cookbook.

The other book is Cooking Light's Mix and Match Low-Calorie Cookbook (all of the meals will add up to roughly 1,500- which of course you can modify to fit your caloric needs).

    Hope this helps!

    My favorite breakfast: Oatmeal!
It is amazing for so many reasons- it's super healthy, lowers cholesterol, and it fills you up (just to name a few!).
It is very forgiving and can be mixed with nearly anything. I never add any sugar, but let the good stuff take center stage.
Here are some of my oatmeal adventures:

Oatmeal with peanut butter (or any nut butter!)
Oatmeal with peanut butter and unsweetened cocoa powder
Oatmeal with peanut butter and bananas sliced on top
    Oatmeal with fresh fruit
Oatmeal with coffee (brew the coffee and use it instead of the water)
Oatmeal with pumpkin pie spices (it's a blend of cinnamon, cloves, cardamon, etc)
Oatmeal with pumpkin pie spices and unsweetened applesauce

Just today I made oatmeal cakes!! These were also delish!
    2 cups of oatmeal
4 large egg whites (or more if the eggs are small and the oats don't get wet enough)
cinnamon to taste- or whatever spice you want
a little bit of cooking spray for your pan
applesauce or fruit, or anything you want for the topping

Mix the oats and egg whites together until all the oats are wet and coated with egg white.
Roll the mixture into a ball and then flatten the ball into a patty.
Cook the patty for about 10 min. total on med. heat.
Flip only once, to cook both sides.
Be careful to watch the cooking, the oats will burn, if you're not careful!
Once, they are cooked, top with your goodies and eat! Yum!

I can't wait to hear how you like these ideas for oatmeal!

I also cook from scratch mostly with fresh ingredients! always interested in having MFP friends who are eating real food! I do, however, have three young and pretty fussy eaters to contend with!
