How much sugar penetrates and remains in fish from boiling in a water/sugar base.

I have a delicious recipe for mock lobster, which calls for boiling a piece of cod in a mixture of water, 1/2 cup sugar, and juice from 1/2 lemon. Obviously I am not going to consume the full 1/2 cup sugar, but I was wondering how much sugar actually penetrates the fish. This is important to me not only for counting calories, but as I am also diabetic, I need to know exactly how much sugars/carbs I am consuming.

    That'd be very hard to accurately guess calorie. Just use a no calorie sweetener.

    Instead of the sugar in that recipe, add some celery seed, chopped onion and whole peppercorns. Simmer the spices with the water and lemon juice for a few minutes before adding the cod. That's how we have made mock lobster in the past. Adding sugar to seafood sounds nasty.
