What food choices are you struggling with?

I’m so busy with work and the gym, I sometimes find it hard to make proper dinners, and end up with a salad or cereal - looking for quick and easy foods0

When I'm in a rush, some of my favorite meals are burritos (canned beans and your favorite burrito toppings), pasta with vegetables and sauce, grains and beans (quick cooking grains like quinoa, rice, oats, bulgur), avocado toast, hummus and vegetable sandwiches, and canned chili on baked potatoes (Amy's makes a few vegan versions). Frozen vegetables can be quickly added to just about any meal. If you have time a few times a week, you can make big batches of beans and grains, bake some tofu, make seitan, and roast vegetables so you can throw them together when you get home.3 -
I was also going to suggest some form of pre-prep or meal prepping. When I'm too pressed for time to do things daily, I can usually arrange my schedule enough to di it all at once, prep, chill or freeze, and then eat as desired.1

They make smaller crockpots that are designed for 1-2 servings, those would be an option to have things like chili or stew ready for you when you get home and you wouldn't have to worry about having lots of leftovers to reheat.
My favorite higher protein foods are beans, tofu, tempeh, and seitan. Canned beans can be ready almost instantly. If you press and marinate tofu in the morning, it can come together really quickly for baked tofu or a scramble when you get home. Same with marinated tempeh -- it can cook in just a few minutes for a stir-fry or sandwich. Seitan reheats really well, IMO. When I make a batch on the weekend, it doesn't taste like a leftover at all when I use it for sandwiches, stews, or other meals during the week.1 -
Hey @danni184 , I like to take a big container of mixed greens to work, which usually lasts me two or three days, and I like topping it with tofu, canned red beans or chickpeas, chopped olives, onion, pasta, and salad dressing. I also like lightly steamed broccoli and carrot with hummus. Juices are a great way to eat fresh: blend 4-5 kale leaves (or a few cups of baby spinach) with pineapple and spearmint. A lot of times, I'll couple this with a protein shake (usually almond milk blended with a banana, peanut butter, and chocolate fudge Orgain protein powder). I hope this helps!1
