How should I use up Brown Rice?

Lunch Ideas please. Protein and Wholegrain as well as a complex carb not to mention cheap (college student here) :) I need suggestions though.

    Add some cinnamon and raisins with a little agave nectar and it's a great breakfast, actually!

    It's a little high in sodium but I love to stuff a bell pepper with brown rice & spicy sausage, bake it to get it hot but still leave some crisp to the bell pepper.

    Honestly? I throw either shredded chicken in or some tuna. Onion salt or whatever spices you like, maybe some veggies, there you go :)

    Eat it on the side of some lean protein and veggies. E.g., salmon and spinach.

    Stir fry some veggies and a protein (meat, nuts, fish, tofu, beans) and serve with it. Broccoli and peanut stir fry is cheap and yummy. Mix it with a can of low sodium beans for a cheap, quick and delicious meal. Add a few jalapeno or some salsa to spice it up. Or add a package of frozen mixed veggies which are super cheap.

    Mixed with black beans and salsa. Or steam some broccoli and toss it in the rice with a piece of chicken (or even canned chicken).

    Shredded Chicken, a cube of bouillon, and some steamed veggies of your choice. It sounds pretty plain and boring but it is one of my favorite low cal/fat foods.

    put in a pan, add some onions,,, peppers, and whatever you like, add some whisked eggs, and make a torte.

    breakfast is great. try with dried fruit and toss in some nuts, add a little maple syrup, yum! or re-fry it with eggs.


    I add it to canned soup to make the soup go further...

    husband makes a meal with other leftover veggies. carrots. celery. avocado. whatever else you have. add some almonds and seasoning, there you go!

    In a non-stick pan "Fry" it using a little bit of low sodium chicken broth on medium heat (so technically you're steaming it). Add some left over chicken, peas, onions and bean sprouts for healthy fried rice.
  • I throw it in soup. I find it's harder to accidentally overcook than noodles.
