  • hi! if you haven't gotten a crock pot, i suggest it highly. i never cooked much, and with my resolution to not eat out all of the time and to cook healthy satisfying meals, i thought i'd give it a whirl! there's an awesome cook book for healthy meals in a crock pot i bought off amazon - "fix-it and forget-it lightly" by phyllis pellman good. here's a sample recipe. i've made it twice already, it's healthy and it's so tasty! it also reheats well. good luck!

    Spicy Italian Chicken from Ilene Bontrager in KS
    Makes 6 servings - ideal cooker size is 5-quart

    1 medium-sized onion, chopped (I use sweet)
    1/2 cup-fat free Italian dressing (such as Kraft Zesty Ital, fat free)
    1/2 cup water
    1/4 tsp. salt
    1/2 tsp. garlic powder
    1 tsp. chili powder
    1/2 tsp. paprika
    1/4 tsp. black pepper
    6 boneless skinless chicken breast halves
    2 tbsp. cornstarch
    2 tbsp. cold water

    Spray inside of slow cooker with nonfat cooking spray. Combine everything but chicken, cornstarch, and water in slow cooker

    Add chicken (raw) - turn to coat

    Cover - cook on low 4-5 hours

    Remove chicken/keep warm

    In a saucepan, combine cornstarch, cold water, and cooking juices. Stir and bring to a boil until thickened.

    Pour sauce over chicken - serve with noodles or brown rice

    Per serving: 180 (30 calories from fat), 3.5g total fat (1g saturated, 0g trans), 75 mg cholestorol, 550 mmg sodium, 7g total carb (.5g fiber, 3g sugar), 27g protein, 2% vitamin A, 0% vitamin C, 2% calcium, 6% iron

    *chicken is much better if you marinade it in the left over dressing for about an hour before cooking!

  • Last night I made Turkey Chili:

    1 medium onion
    pan oil spray
    1 lb white meat ground turkey
    1 large can pinto beans
    1 large can whole tomatoes, ripped apart
    2-3 Tbsp Southwest Seasoning (I used Pampered Chef)

    Spray the pan, cook onions until tender, add ground turkey and cook through. Drain pinto beans, add to pot. Rip apart the whole tomatoes and add with all the tomatoe sauce. Add Seasoning to taste, then simmer for 10-15 minutes.

    Total calories for the whole pot = 1519 calories.
    If divided into 5 servings: Calories per serving: 304 calories
