Low calories meals for a picky family of four?

I'll eat just about anything, as will my one year old. My husband and my five year old, not so much. Nothing weird like kale, figs, etc. Husband won't eat corn, tomatoes, spaghetti squash, cauliflower. We eat a lot of broccoli, green beans, chicken, ground turkey.

I've been really into sheet pan meals lately. You can find some on Pinterest. You basically roast your protein (chicken, flank steak, whatever) in the same pan with your veggies. Easy to throw together and easy to clean up. You can also customize based off of your picky family's preferences. If they don't like one veggie, replace with another.2

What calorie count do you want?
I do around 500 calories for my dinner and a lot of recipes without cheese, cream or frying fit that okay.
Things to try adding to meals:
Spinach, sweet potatoes, carrots, zucchini, cucumber, cabbage, peppers, peas, lentils, black beans, white beans, garbanzo beans, pork, eggs

My weekly go to meals are:
-Beef roast in crockpot with carrots & potatoes (put in dried ranch, Italian and brown gravy packets and it's delish)
-Beef tacos and let everyone build their own so if you want guac on it or cilantro you can and your picky eaters don't have to add those
-Breakfast casserole for dinner (eggs, milk, cheese, spinach or any veggie you want and either cooked sausage crumbled in it or bacon on top
-I marinate my chicken and use the George Foreman grill at least twice a week. Marinated is olive oil, brown sugar, spicy mustard, garlic, salt, pepper, lemon and lime juice (but do whatever fits your taste) for at least an hour (keeps in fridge for a couple days). Side of broccoli and rice/potato with it would be good.0 -
