Quick Easy Meals

I need help with some quick easy meals and food to keep on hand to grab. I am always on the go between working 2 jobs, exercising, my boyfriends house, and getting CME hours so I can re-certify for my EMT. I don't have a lot of time to sit down and cook. If anyone has any suggestions I am open to them.

You can microwave potatoes, broccoli, scrabbled eggs, fish... Make a pot of soup and heat it up during the week.0

I got one of those lunch boxes that you put in the freezer and the sides and bottom and top freeze to keep your food cold all day. I pack a sandwich, nonfat yogurt string cheese, one or two portions of almonds and one or two pieces of fruit. Sometimes I also take soup in a sealable container instead of the sandwich. I then decide as I go thru the day what I want to eat as a snack or save for my meal. I also microbaked a few sweet potatoes wraped them in plastic and put them in the fridge and eat them with a little butter brown sugar pumpkin spice and a dollop of cool whip, makes a great snack or breakfast. hmm hard boiled eggs, I also pack some of those sometimes or eat them at home for a snack. Dont like them that much though. Trying too but jury is still out on them. And I keep edamame frozen that I buy at walmart in the freezer. I eat it as a bed time snack or sometimes just that for my last meal. i dont really have a breakfast, lunch or dinner. Bcuz like you, I do shift work and am always on the run. so instead I eat as I am hungry until I feel full. if you have any questions feel free to message me.0

I'm lazy, I live alone, and I hate doing dishes. So, I microwave everything in Ziploc steamer bags. I buy kale, fill up a steamer bag, nuke it, and boom, done. I put the baggie in the fridge and scoop out portions when I'm ready to eat. I do this with everything - chicken breasts, veggies, etc. Also, I just microwave sweet potatoes (I do big ones and cut them in half when they're done, and then put the other half in a baggie.) When it's cold and I want a hot breakfast, I cook steel cut oats in advance, too, and while it takes a while, I make a week's worth and single servings heat up fine.0

I hope you can use this!!!It only takes a few minutes to microwave anything in these bags... I often do it right when I get back from the grocery store so I don't have to deal later... My mother bags up stuff in Ziploc steamer bags she won't cook immediately and freezes them - say, halved chicken breasts, etc. Since she also lives alone but sometimes buys big bulk packages of stuff, this is her way of repackaging... you can put the steamer bags straight into the microwave with frozen food, just for longer timings. I haven't been doing this, but it's working for her.
I vary the seasonings that go in the baggies - a couple of spoonfuls of minced garlic (from a jar in the fridge) and maybe onions, and then whatever else varies (Old Bay, Trader Joe's 21 Seasoning Salute, Badia Sazon Tropical, Konriko Chipotle Salt...) I tend to go with minimal seasonings in the steamer bag so that I can put seasonings on right before I eat, so if I'm in the mood for hot sauce, then it's hot sauce, or if I'm the mood to drench my food in balsamic vinegar, I can do it, etc.0 -
