    I was thinking chili too. I'd use some stewed tomatoes (leave the juice from the can in) and shredded chicken, or ground turkey (cook and toss in to the mix).

    Season how you like it, I like my chili SPICY!

    Super Easy red beans and rice.

    12 oz chicken or turkey smoked sausage
    1/2 C salsa
    1/2 cup Barbecue sauce
    1 1/2 cups cooked brown rice
    1 can kidney beans drained.

    Brown sausage and drain if needed, add salsa, barbecue sauce and beans. Simmer 5-10 minutes. Add cooked rice and stir. Garnish with chopped green onions.

    Also you can go lighter on the rice. My husband likes it with only 3/4-1 cup of rice.

    we made this last year and it was good:

    * 1 -2 tablespoon oil or 1 -2 tablespoon butter
    * 1 lb smoked kielbasa, sliced 1/2 inch thick
    * 1 small onion, chopped
    * 2 garlic cloves, minced
    * 1/2 teaspoon dried rosemary, crushed
    * 1/2 teaspoon dried oregano
    * 1/2 teaspoon dried basil
    * 1 (14 1/2 ounce) can peeled diced tomatoes
    * 1 (16 ounce) can great northern beans or 1 (16 ounce) can navy beans or 1 (16 ounce) can cannellini beans, drained

    heat oil or butter in a large skillet, add kielbasa and cook over medium high heat until lightly browned, remove with slotted spoon.
    reduce heat to medium, add onions and cook until transparent.
    reduce heat to low, add garlic and herbs and cook 1 minute.
    add kielbasa, tomatoes and white beans, bring to a boil, simmer 10 minutes.

    I do an asian stir fry all the time with rice, veggies and beans instead of meat. You have to eat a HUGE portion to be full, but it's so healthy and low fat. Add soy sauce to the rice, toss with veggies, and top with beans. Super simple!

    That's sounds delicious, but it is an extremely high fat recipe...
