Roasted vegetables are tasty so how about a thread collecting awesome recipes.
Simple oil, salt and pepper is great but there are other ideas out there. Share please.

    I do roasted veggie stuffed portabella;
    Zucchini, brown onion, yellow squash, mushrooms, asparagus, tri-color bell peppers, spray pan with cooking spray, season veggies with salt, pepper, basil, oregano, roast in 400 oven, stirring veggies once. Stuff inside portabella, top with marinara and mozz, pop back in oven to melt cheese.

    We made Roasted Winter Vegetable Soup a while back.

    Pumpkin, potato, sweet potato, carrot, parsnip, that sort of thing roasted in the oven, and add stock and seasoning and cook then blend.

    Sweet potato, beets, carrots, parsnip, yukon potato, coat with a balsamic vinegar, honey, lemon juice, dash of paprika, salt and pepper to taste....bake 400°c for 45 mins or till tender .. coat with the remaining dressing before serving.

    I roast a lot vegetables. This has become an easy go to recipe when I have the oven on for a roast. I usually skip the garlic and cumin because the commercial brand of harissa I use already has lots of both.

    Another lesser known roast vegetable recipe I like is roasted Belgian endive. Halve the endives and fit into a roasting tray, cut side up. Drizzle with olive oil and season with salt and pepper. Roast about 45 minutes at 200C until cut edges are charred.

    Try roasting diced sweet potato and apple with a little bit of orange juice salt and pepper (dusting of ground cloves optional). Throw on a Pam sprayed sheet pan and roast at 400 to 450 keeping an eye on it until done.

    I do a roast with Indian spices from the book Vegan Indian Cooking by Anupy Singla.

    Cut up one head cauliflower, one head broccoli, and a tub of cherry tomatoes.

    Toss with a few tablespoons of oil and a tsp. of cumin, turmeric, chili powder, or any other spices you want.

    Roast at 400 until edges are crispy. Delicious! I love eating with naan and hummus.

    Roasted potatoes... I mix up olive oil, salt, pepper, and garlic (don't skimp on the spices!) in a bowl, then cube up the potatoes (or you could slice them) and dunk them into the bowl. I drain with a slotted spoon and then put them on a pan to roast. If you let them roast until they're just a bit crispy they are oohhhh so good.

    edit: I should mention this also works really well with butternut squash.
