Almost Homemade Zucchini Cake

8x8 sprayed with Pam pan.
Oven 325
Time to bake 35 mins

In the bowl:
1/2 (of the box) of Pillsbury Sugar Free Golden Cake Mix
1 tsp baking powder
1/2 tsp of cinnamon & 1/2 tsp ground nutmeg
(you can sift together through a mesh strainer if you would like to or just mix well with a wisk)

In the food processor:
1 cup of black beans or other plain canned beans
1 6oz container Dannon Light & Fit fat free vanilla yogurt
1 tsp vanilla extract
1/4 cup egg substitute (egg beaters...all whites etc)
BLEND UNTIL SMOOTH

Finely grate one small or medium zucchini

ADD the wet ingredients including zucchini to the bowl of dry ingredients... and mix well
pour into pan and bake.

Cut into 9 squares. 121 cals per serving

Beans - Black, cooked, boiled, without salt, 1 cup (canned no salt ) 227 41 1 15 2 15

Fresh Veg - Green Zucchini, Raw, 1 medium 31 7 0 2 20 2
Better'n Eggs - Egg Beaters, 1/4 cup 30 1 0 6 120 0

makes 9 squares
Total: 1091 238 22 34 1901 23
Per Serving: Calories121 Carbs 26 Fat 2 Pro 4 Sodium 211 Fiber 3

NOTE: I think you can play with the ingredients and tweek it as you like :happy:
If you add unsweetened cocoa powder it will make a great moist brownie.
You can leave out the beans and just add more zucchini or crushed pineapple. etc etc

I froze them, I use one square, heat it up in the micro, top with a few frozen banana slices and 1/3 of the individual cups of Skinny Cow Ice cream.
I do the same with brownies...keep them and bananas frozen for a very satisfying treat.

    Looks good. can you tell me how the calories are set up? I can see the 121 but what do each of the numbers represent? as in what is Protein and which is fat etc.

    I came across the cake mix at Walmart ...it is sugar free so I figured if I used half the box I already had the base of a low cal cake.

    Being that it is "Golden Cake Mix" it is kind of neutral to add a variety of flavors...

    I will make the other half of the box with the cocoa & a table spoon of instant coffe and turn it into a brownie :love:
