I posted before about how I'm quite a picky eater and I struggle with lunches. We have just got a microwave and sandwich toaster at work, and I've recently been doing scrambled eggs and toast or scrambled eggs with added extras eg cheese and ham by itself. I wondered if anyone had any other microwave quick easy recipies I coukd use at work? I'm not keen on salad you see! Thank you

Yes! I'm at work for both lunch and dinner, so it's cold food or something from the microwave (used to be a LOT of drive-thru.) It can be really frustrating as I'm not a reheat-leftovers kind of guy.

I warm up leftovers from dinner the night before, soup, or a frozen meal.

Leftovers. Chili recipes make several servings so that'll get you several lunches. Sometimes I eat oatmeal for lunch. Assemble a quesadilla the night before, by making it yourself you have more control of the calories; I know it sounds weird but I like cheddar and apple quesadillas for the contrasting flavors.

I work a desk job as well and have only a microwave or kettle.
I got into the habit of buy a flat of canned soup (or make your own or buy the organic boxed one, whatever suits you) and then at least I can have something warm during the day and then i snack the rest of the day. Today is tuna and crackers. But the canned soup is super cheap and super easy. I keep a bowl, spoon and can opener at work and bam something warm in my tummy.

I'm in the same boat, very fussy eater. I think I'm going to try to make dinners that will leave good leftovers to take to work. I do Lipton Cup of Soup, crackers and peanut butter, cheesestrings now. It's not working though as I'm starving by the time I get home

I eat a lot of chicken (boneless skinless chicken breast). I under bake in the oven a little so when I microwave at work it is not over cooked. Uncle Ben's bags of microwave rice, and steam in the bag vegetables. I make meals on my day off and don't have to worry about lunch or dinner for the rest of the week. Quick and healthy

I usually take a packet of instant oatmeal and add some wheat germ, slivered almonds, coconut shreds, and chia seeds to give it some heft and nutrition. Very easy, just add water and nuke!
