Mostly protein and veg main
I've got some leftover porcini risotto which I will be stuffing into mushroom caps with a sprinkle of cheese to bake as a starter for tomorrow's dinner.
Given a carb heavy starter, looking for a main course that is mostly protein and veg. I am getting a little tired of my go-to recipes of tagliata di manzo, salade nicoise, and chicken caesar.
Any other ideas that would compliment risotto stuffed mushrooms?

A lightly crusted pan seared pork chop over a bed of seasoned lentils with gravy with a side of asparagus in a lemony sauce? http://redforkfoods.com/products/vegetable-seasoning/lemon-herb-asparagus-skillet-sauce is my favorite asparagus sauce, but don't buy the 10 minute promise, it takes a good 20 minutes to cook them on the stovetop in a skillet this way. It lists all the ingredients and shouldn't be hard to mimic if you prefer fresh over packaged sauces.
If you had any diet requirements, you didn't specify. That gives you a ton of protein and fiber, and the lemony asparagus should lighten up the overall heaviness of the lentils and chops.0 -

I recommend fish. Always high in protein but not high in calories (unless it’s salmon). I personally like cod with garlic & lemon.0

Thanks for the suggestions. I ended up opting for Cambodian beef lok lak, minus the rice. Not an obvious follow up to risotto stuffed mushroom caps but the balance of raw veg and protein I wanted for after the starter.
