Need ideas for birthday party food

My daughter's 5th birthday party is on the 20th and the plan (prior to rejoining MFP) was pizza, chips, pretzels. It's an outside pony party at a stable with 80 people so I wanted it to be simple. Now that my BFF and I are trying to lose weight, I wanted to incorporate some healthy options. I still want to have pizza as the main dish and I will save calories for a slice but what about the cake? I'm making cup cakes so any low cal cake receipes? Low cal icing? Just for a few of the cup cakes anyway. Thanks!!

    Google low cal cake recipes. I think they use - even though it sounds odd - applesauce. There is a lady here that makes the BEST sugar free cakes... so I know there are recipes out there.

    if its just one day and your not planning on keeping any of the left overs then why not just enjoy yourself? the more you worry about it the more likely your gona eat the wrong things cos your crave them so just have your slice of pizza and a slice of cake. if your hosting your gonna be running around burning cals anyway and if your baking and cooking your gonna be doing the same.

    Low cal low sugar party food is no fun.....i suppose you could make the regular stuff and some low cal treats for the randoms who are also watching their weight.

    Jelly (jelo) is a great sugar free option, and sorbet and frozen yoghurts....also carrot sticks and dip.

    Saw something on TV the other day for cupcakes; make the cake out of angel food cake mix and top with fat free whipped topping and fresh strawberries. They looked really good.

    I just had my daughter's graduation party a few weeks ago & I bought a few smaller cakes from Sam's club so as to have a variety. (chocolate, strawberry & lemon) all very delicious of course, & fattening. BUT, my sister-in-law brought a .....ugh can't remember what you call it, but it was the HIT of the party. It was just torn up chunks of angel food cake, various fruits & berries (she used strawberries, rasberries & blueberries) and coolwhip placed in layers. It was all put in a tall cillender shaped clear dish so you could see all the layers & it was so beautiful. She of course arranged the top layer with strategicly placed berries & coolwhip to make it even prettier. No one could wait to dig into it & it was gone WAY before desert time. I almost didn't get any! I actually had a bunch of the fatty cakes left over because everyone preferred the angel food/berry cake. It tasted just as good as it looked. And much lower in calories than any other cakes there.

    Diet soda cake:

    Mix one box of cake mix with one can of diet soda. Bake as directed on box. Serve with strawberries and lite Cool Whip. I have never tried making cupcakes like this though.

    Flavors that go well together:
    Yellow or Lemon or Cherry Chip cake with diet lemon/lime soda or diet cream soda
    Chocolate cake with diet cola or diet root beer

    A cupcake recipe from Hungry Girl (have never tried this):

    Mellow Yellow

    Ingredients:

    For Frosting
    1 1/4 cups Cool Whip Free, thawed
    1 1/2 tbsp. Jell-O Sugar Free Fat Free Vanilla Instant Pudding Mix

    For Cupcakes
    Half of an 18.25-oz. box (about 1 1/2 cups) moist-style yellow cake mix
    3/4 tsp. baking powder
    1 cup Sprite Zero (or another diet lemon-lime soda), room temperature
    1/2 tsp. vanilla extract
    1/2 cup liquid egg whites or (about 4) raw egg whites

    For Topping
    3 tbsp. rainbow sprinkles

    Directions:
    Preheat oven to 350 degrees.

    To make the frosting, combine Cool Whip with pudding mix in a bowl, and mix until smooth. Cover and refrigerate until cupcakes are ready to be frosted.

    In a large bowl, combine cake mix with baking powder and stir until free of lumps. Add soda and vanilla extract, and stir or whisk until batter is smooth. Set aside.

    In a separate bowl, whip egg whites with a handheld electric mixer set to medium speed until fluffy, about 1 - 2 minutes. Gently mix egg whites into the cake batter until thoroughly combined.

    Line 9 cups of a 12-cup muffin pan with baking cups and/or spray with nonstick spray. Evenly distribute batter among the 9 cups. Cups will be VERY full -- this is okay!

    Bake for 15 - 17 minutes, until a toothpick inserted into the center of a cupcake comes out fairly clean. Set aside and allow to cool completely.

    Once cupcakes have cooled, top each evenly with the frosting and 1 tsp. sprinkles. Chomp chomp!

    MAKES 9 SERVINGS

    Serving Size: 1 frosted cupcake with sprinkles
    Calories: 164
    Fat: 3g
    Sodium: 293mg
    Carbs: 30g
    Fiber: 0g
    Sugars: 16g
    Protein: 2.5g

    Chocolate angel food cake with strawberries and lite Cool Whip is another one of my favorites.

    If you're making the cupcakes, a really easy recipe I found is one cake mix mixed with one 12 ounce can of diet soda. You can use whatever flavors you want. It's pretty good for cupcakes. The nutrition info is really easy to figure out. I've tried chocolate cake with diet cola and yellow cake with diet sprite or diet orange soda. For frosting, light coolwhip is decent. Or you could mix it with a package of sugar free pudding mix.

    Thank you all so much! I am still going to have the regular food and cup cakes for the kids and whomever but I wanted a few healthier options for the moms watching their waistline. :) I can't decide now if I want to make the angel food layered cake or just soda cup cakes.

    A good frosting recipe is:

    Coolwhip (light or fat free)
    1 box of vanilla pudding mix (dry)
    1 can of crushed pineapple drained

    Refrigerate overnight.

    You can use this with the angelfood/fruit cake thing above. It's so light & refreshing, not sickening sweet.
