Yummy Egg Cups

I made these for a quick breakfast for the week. I just baked them and once cooled, wrapped them in plastic wrap and into a freezer bag they went. Popped them in the freezer. Grabbed one of the little packages this morning and just popped it in the microwave for a quick and easy breakfast (remove plastic wrap). It took me about 1/2 hr or so to make yesterday and just 1.5 minutes to heat up this morning. You can make so many different varieties and they are fun and easy!!!

Serving size 2 cups 216 cals ( I made 6 cups = 3 servings)

Used:
Eggs - 6
Onions - .5 cups finely chopped
Feta Cheese - .25 cup
Green Peppers - .5 cups finely chopped
EVOO - 2 tsp

Cooked the onions and green peppers for a little bit in EVOO. Placed cupcake liners in the cup cake sheet. divided the onions and peppers into each cup evenly. Poured the eggs (beaten) into each cup evenly and then added the feta (evenly divided). Cooked until the eggs were done. Let it cool for a while then wrapped them up and put them in the freezer.

    It was fast, easy and yummy. I paired it with 1/2 a banana. Filling too!

    Let me know if you try it. I don't really have time in the mornings to prep breakfast so this works out perfectly for me!

    Thanks for the idea. I think I will share this with my stepson and maybe we will make some of these for him when school starts. A fast and healthy breakfast without all the preservatives that come from pre-packages foods.

  • Hey! I've been making a version of this. The first time I did it, I used cupcake liners and the egg stuck to it, making it very difficult to eat. The second time I forgot the pam and the egg got stick in the container. Do you have trouble with this and/or solutions? Maybe the EVOO is the key to making it not stick...

    Def making them for the kids for school. No need for all those yucky preservatives when they can have something yummy and quick!!!

    I really didn't have much trouble peeling them this morning. I used the evoo to cook the onions and peppers but not for the liners. I just peeled them as soon as they came out the microwave and they didn't stick. I peeled them quickly but carefully so that the egg wouldn't stick. Well not too much atleast, just like with a regular cup cake. I have to try the pam on the liners and maybe it will be easier??

    I have to try without the liners and just Pam too. This should work I think!

    Thanks for sharing, I am totally going to try this recipe, not only for me but for my kiddos too. School is starting and it's hard to get a decent breakfast in them in. Thanks again!!!
