    I am eating some as we speak. I agree they taste like dirt, but I kinda like them. When I was a child my mom made me eat picked beets every day and I hated them. It took me about 40 years to even try them again. I did some research and I have prepared them different ways, boiled, raw, baked. I like them in my healthy coleslaw or on their own with some ACV. I guess the dirt taste has grown on me.

    My favorite Vegan Salad (or maybe my second favorite one) - Roasted Beets (pickled), Arugula (rocket in the UK/Australia), Goat Feta, Quinoa, Walnuts and a Pomegranate Vinaigrette! Amazing.

    Mesclun salad with roasted beets, goat cheese, toasted hazelnuts and vinaigrette.

    Beet and tomato soup (recipe from Madhur Jaffrey's World of the East Vegetarian Cookbook -- a classic!)- incredibly good.

    Cabbage borscht (uses beets)

    Herring under a fur coat (uses beets)

    Lovely when roasted with balsamic vinegar and garlic.

    Or whizzed up with roasted walnuts, tahini and garlic, then dip veggies or pita bread and enjoy!
